Pecan Pie Bars

Ingredients

Crust

  • 1 ¾ C. all-purpose flour
  • 1/3 C. light brown sugar
  • ¾ C. butter, softened
  • ½ tsp. salt

 

Filling

  • 2/3 C. light brown sugar
  • 1/3 C. all-purpose flour
  • ¾ tsp. salt
  • 2 Tbsp. butter, melted
  • 1 ½ C. dark corn syrup
  • 4 eggs
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 1 ½ C. chopped pecans

Directions

Crust

  1. Preheat oven to 350°F
  2. Combine the flour, brown sugar and salt and mix with hands, breaking up any clumps of sugar.
  3. Beat in butter until a dough forms.
  4. Press the dough into the bottom of an ungreased 9×13 pan.
  5. Bake for 18-22 minutes or until the edges are lightly browned.
  6. Remove from the oven and prepare the filling.

 

Filling

  1. Whisk together the brown sugar, flour, and salt.
  2. Add the melted butter, corn syrup, eggs and vanilla and blend well.
  3. Stir in the pecans.
  4. Pour mixture over the still warm crust.
  5. Bake for 30-35 minutes or until set.
  6. Allow to cool then refrigerate for 1 hour before cutting into bars and serving.
