Almond Nuggets with Chocolate Drizzle Recipe

Ingredients

  • 2 eggs
  • ½ C. sugar
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 1 tsp. Spice Islands® Pure Almond Extract, divided
  • 1 tsp. Clabber Girl® Baking Powder
  • 1 C. all-purpose flour
  • ⅓ C. sliced almonds
  • 2 oz. bittersweet chocolate
  • 1 Tbsp. butter

Directions

  1. Preheat oven to 325ºF.
  2. Spray baking sheets with cooking spray like Baker’s Joy®.
  3. Whisk eggs, sugar, vanilla extract and 1/2 tsp. almond extract in a medium bowl.
  4. Add baking powder, and blend thoroughly.
  5. Stir in flour and almond slices and mixing until completely combined.
  6. The batter will be stiff.
  7. Drop by heaping tsp. onto baking sheets.
  8. Bake for 15 minutes or until the edges of the nugget start to brown.
  9. Cool on a wire rack.
  10. Melt chocolate and butter in a heavy saucepan over low heat; stirring constantly.
  11. Add 1/2 tsp. almond extract.
  12. Drizzle chocolate over top of each nugget.
  13. Store in tightly covered container.
